    Almond and Parmesan Crusted Venison Bottom Round

    Been off work so its given me a chance to experiment with some cuts I have in the freezer. This would work fine with a backstrap as well, but I like my backstrap with as little as possible added.

    I smoked the bottom round and then finished in the oven with a Almond/Parmesan Crust made in the food processor from the following:
    • 1/2 Cup Parmesan Cheese
    • 1/2 Cup Whole Almonds
    • 1/2 tsp paprika
    • 1/2 tsp garlic powder
    • 1 tsp kosher salt
