    Scotch Eggs

Nothing fancy but my new favorite venison breakfast food.

Dust hard boiled eggs in seasoned flour, wrap in breakfast sausage, dredge in egg, coat in panko breadcrumbs and fry in 300 degree oil until golden.

Dip: about 1/2 cup Mayo, tablespoon of Dijon mustard salt pepper and cayenne.

I’ve made them a couple of times, though not with venison, for the family. It’s great eating, but not the easiest breakfast to throw together before you’ve had your morning coffee.

I always did soft boiled egg so the yolk was still semi- soft/ gel at the end.

Were they not too dry using hard-boiled eggs? Or did you mean to say soft-boiled?

I steam the eggs so they are just barely set. My wife doesn’t like runny yolks.
