Other than "hunting" sounds like you need a Shearwater

1752 Blazer or Havoc river rat with a jet on it. Only reason being is you put "skinny water" in there.

i’d say any of th good quality flat bottom aluminum boat would work great for what your wanting
tunnel hull ? maybe they do hurt performance on the majority of running but if you plan on a lot of really skinny running then go tunnel

That is what I have and I fish everything from the flats to 150’ deep bays/jetties.
