    Haven’t put any chili sauce in a sausage but I do put lots of Thai Chilis and white pepper , black peppers, Szechuan peppers, I don’t really have a recipe lol I just put all these spices I got I use garlic, shallots, lemongrass, lime leaf, coriander seeds, cumin, fennel seeds , turmeric, galangal roots, chili powder, smoked paprika ,Himalayan pink salt, and thai basil

        I have never bled out my hogs nor have I put them on ice for several days. I do take care of the meat right away and make sure its butchered, trimmed and cooled down properly. This method has produced superior results.
