We would always brown them with a little flour and then let them cook in brown gravy and onions.

Young squirrels chicken fried.
Older squirrels smothered down in a nice brown gravy with onions and mushrooms served over rice with a nice side of corn bread and fresh green beans.

Mom always made squirrel and sausage jambalaya.Grandma would put it in gumbo.

Clean squirrel and cut into 6 pieces.
4 legs
Back with ribs on, cut in half.
Place in pressure cooker. Pressure for 6 minutes after the valve pops up. Do a quick release (be careful with this).
Season cooked pieces how you like. Save some Seasoning and add to about 2 cups of flour.
Roll cooked pieces in seasoned flour and pan fry. No eggs or wash. Just roll them in the flour.
This is just like pan fried chicken. You only need a 1/4" to 3/8" of oil in the pan.
Fry til golden. They are already cooked so this should only take a few minutes.
When done, drain off some oil, add garlic and onions. Sauté until translucent.
Add enough flour and oil to make a roux for gravy.
When you have the gravy done you can add the squirrel back if you like.
My Granny served the squirrel fried and the gravy was to put on the rice.
Fall off the bone tender squirrels in no time.

Cut the squirrel into 4 parts, brown them, then into the crockpot with veggies (carrots, mushrooms, celery, etc) stock, and seasoning. Serve over rice.

Don't forget to remove the BB's if you use a shotgun. I have found a few over the years the hard way
