    Cukes, onions, tomatoes

    I don't know where I got this one--maybe on here? But I tried it today and since I am a cuke & onion fan plus tomatoes are my favorite, it really hit the spot. If you have diabetic concerns, substitute sweetener for the sugar, and may want to adjust the amount of garlic to your personal taste--



    * Ingredients :

    3 medium cucumbers, peeled and sliced 1/4 inch thick
    1 medium onion, sliced and divided into rings
    3 medium tomatoes, sliced
    3 or 4 cloves of minced garlic
    1/2 cup vinegar
    1/4 cup sugar
    1 cup of water
    2 teaspoons salt
    1 teaspoon coarse ground black pepper
    1/4 cup oil
    1 teaspoon fresh mint, chopped (optional)

    * Instructions :

    Combine all ingredients in a large bowl. Let chill in the refrigerator for a couple of hours and enjoy

        The wife makes one similar to this but adds some chopped green onions and uses Lite Italian dressing instead of the water, sugar, vinegar and oil. It is REALLY good with Creole tomatoes form New Orleans when in season which is about May or June.

          That's a great idea---that'll be my next test---

            I like it tangy, so we leave the sugar out and substitute Italian dressing for the oil.
