          I do mine 250 unwrapped then rest in a cooler for Atleast 1 hour. My buddy does his overnight, just depends on what kind of result you want…. Fall apart (pot roast imo) or good bark and good bite to it

                    Maybe he has good results at that temp, but I run a minimum of 250° and max 300°. I always try to keep it around 275°. But my pit cooks around an hour and a half per lb. That’s why I said earlier to know your pit.

                            I agree .. sounds like it’s on pace for a good finish.

                            If you don’t already have one, in the future get your an instant read hand thermo so you can check other parts of the brisket as well. It’s a nice compliment to the monitoring probe you have in already. It also doubles as your probe for the final “like butter” check. They are cheap and handy as heck for all cooks.

                            This is my favorite and even has a 15% off coupon attached to it. Looks like $16.55ish to your door.

When I was buying my second Maverick 5 years ago, the phone technology was still off but he said his new unit works great now. . I think it has a wire from the probe to the home unit. I’m
