Made this last week, but did it in the oven. Seared the meat on all sides in a hot cast iron, then stuck it in the oven in the cast iron @350 degrees until 130 degrees. Pulled it out and let it sit until 140. It was a big hit at dinner. A meat thermometer has changed the game for me, I was ruining venison until I picked a thermometer up that I leave in while I cook.

The recipe from OP is one for the books. Been using it for several years now.
However, I recently tried a new one that is just as impressive... only thing I added to this was fresh chopped garlic. I pureed everything to make it marinade a little easier as well. 1 1/4 lbs. of Flank Steak 1 cup of Pineapple Juice 1/2 cup of Soy Sauce Juice of 4 Limes, freshly squeezed, 4 small or 2 large 1/4 cup of Cilantro 1 Jalapeño, roughly chopped, and seeded if you do not like heat 1/3 cup of Onions, roughly chopped 1/3 cup of Water 1/2 teaspoon of Pepper 1 teaspoon of Salt 2 teaspoons of Cumin |

This is one post that deserves to be brought to the top from time to time. It’s truly great stuff, we make this a lot, and I mean a lot. It’s what I use for doves exclusively anymore. Might even make ducks eatable lol. Fantastic recipe, I had a few thing to spice it up a lot but it’s great the way it’s written, also, we just like about everything spicy.

Old school - citrus juice, whatever you have and put 1/2 that amount soy sauce. Add some garlic and marinate. grill and enjoy. I use this and have tried chile's, cilantro, cumin, etc but at the end of the day the 3 ingredients are what make it.
