follow-up....was really excellent, I am sure I will do tiny tweaks, like less salt, but what a great recipe. Excellent on pounded chicken breasts....which I never use for fajitas, using dark meat usually instead. Winner here, folks.

Very good. Adobo/chipotle taste was dominant. Might cut back on that next time. Wife liked it.

Made this again last night.....total winner for beef and yardbird. Best ever. Like others have said....for first-timers, back off the salt by half.....and try maybe one chipoltle pepper or two.....def wouldn't do more than that in the beginning.....YMMV....

said it way back when this first got posted, this is by far the best marinade for fajitas or just in general that i have ever had or used.

grilling chicken? rub some of this up under the skin before it hits the grill.

Default Had to try this becasue so many of yall highly speak to it

I just made some thicker cut Malinase steak cuts in this marinade and everyone who ate it complimented on it. Was so good. I cut min into thinner strips and did it over a jasmine rice, but it was legit still. The only changes I made were in amounts because I had a larger group of people and I didn't have onion powder, so I used a fresh shallot instead. Great marinade that I can now tell people it's my secret recipe.

I made beef skirt steak and chicken breasts over the weekend with this marinade. It cannot be overstated how good this is. I tried to cut the heat back for my family but still had it a bit strong. A little less salt would improve it for me. The beef had a good hint of lime, which I like. I'm going to make this far more frequently. Both times I've done this, it's been a big hit!

Got 8 pounds of meat marinating in the fridge for tomorrow. These are a hit every time and you really would have to try to mess it up. I go heavy on the garlic and add a little extra lime juice.

First time trying it, beef and chicken, really outstanding! We’ll be doing it again on the next round. Figured we’d want to tweak it a bit like most other recipes, but not sure this can be improved on. 11 years ago since this post, wish we’d have tried it sooner!

I’ve made this a few times now and it’s phenomenal on chicken thighs. I like it on chicken thighs more than flank steak actually. Still great on both though.

I've been looking, not real hard, for a good marinade for fajitas.

Salt adjusters, how much did you cut out? Not a huge fan of salt.

I'll be direct fire cooking over some post oak.

Alright. I got the marinade done and soaking the meat. Cooking fajitas for taco Tuesday!! The wife and I both liked the smell and taste of the marinade.

I’ll be cooking over direct fire post oak coals.

Official report.
Salt perfect.
Heat perfect.
Cilantro perfect.
1 lbs of meat not enough. I used 2 lbs and I could have added another 1 lbs of meat with no issues. I added the remaining marinade to some veggies in a cast iron to sauté.

Hands down the best beef fajita I’ve ever had. Excellent job AGSFIGHT!!

I’m going to fillet open a pork loin this wknd, rub it down and roll it back up.

i agree, the chicken holds the flavor better. sausage is great too.
