    Fried eggs a la Montana

    I don’t what else to call them. I love fried onions.

    Chop 1/2 white onion, 2 celery sticks,, pepper, mushroom and a couple 1/8” slices of turkey breast cubed. Fry in olive oil until onions are soft. The celery when fried gives it a good taste.

    Break 3 eggs on top, cook until whites set. Use spatula to cut thru onion mix underneath and flip each. Cook long enough to get eggs how you like. Served with thousand island dressing here.

    Really good, fills me up, probably healthy as well.

                I guess you could put salsa, sour cream and guacamole on top?

                If I could find my disc cooker, it would be a great way to make a ‘hearty’ breakfast for a bunch of folks. It got lost somewhere in the move from CA to Montana.

                  Good stuff! I substituted the celery with potatoes , the Turkey with venison sausage, and the thousand island for country gravy, then added a biscuit and 3 strips of bacon. Turned out excellent
