                  1 pound bag of casserole beans washed and covered with enough water. Soaked for a few hours before. One smoked ham hock and half an onion then season to taste with garlic salt, black pepper, some type of creole seasoning, brown sugar and chili powder. Just before done add pickled jalapeno juice about 3 -4 tablespoons. Everyone over thinks it on beans. Simple recipe seems to work the best for me. Don't over season you can always add at the end but can't take out. I usually cook in crock pot 8-12 hours check if bean is soft periodically.

                    This is how I season them, but I cook em on stove. I add green chiles and onion to this
