Default Jalapeno Chicken Poppers

I cook these about once a week. Not a big fan of the ones with cream cheese, so I try different things. I marinade the chicken breast for a day or 2 and freeze for later. Smoke @ 180 for about 1 hour and crank it up to 275 for 30 minutes. Gonna throw these on the smoker around 5:30 this afternoon.

With duck, goose or dove prepare as above but make a glaze from brown sugar and mustard and apply a liberal amount 10-15 minutes before finished and let the glaze set. You won’t be disappointed.

Didn`t want to start another thread but these are pretty good to. Tator round/cheese/sliced jalapeno wrapped with bacon. Toothpick to hold it together.
