    She was walking the woods until last Saturday morning. Been aging 8 days never frozen.

        Seared venison shanks, S&P
        Garlic, tomato paste, cherry tomatoes, leeks, onion, carrots, red wine deglaze
        Brown stock, bay and thyme
        red potatoes an hour before finishing
        Sit and wait

              Turned the heat off right before midnight. Rested till 530a and been in the fridge since then to meld. Shredded the meat and now its reheated and ready for action.

                      That's what for dinner tomorrow night. Slow cooker set at 7 am and dinner at 6 pm, venison rump with carrots, onions, zucchini.
                      Tonight's menu is tenderloins sauteed in butter with mushrooms, yellow squash and carrots.
