    moose brisket

    Spouse saved part of one side of the bull's brisket he took so I get to smoke it today.
    Not a big hunk of meat so I'll find something else to throw in with it .

    Going with Santa Maria style, red oak for smoke and my seasoning . I have a smoked sea salt, smoked cracked peppercorn ( both red oak smoked), dried garlic and guajillo chile flake rub.

    Beautiful fall day in Laramie today, it's homecoming for UW. Should be in the 50's all day and party cloudy.

    Spouse has a pot of heads simmering too, friends' antelope, my antelope and his moose in a separate pot. No pics of that, yuk !

        Thawed out a rack of feral hog ribs to go on the smoker also.
        Coming up to temp slow, it's about 49 out and a little humidity today.

        Thinking I'll have to cheat and wrap the brisket and finish in the oven, but we'll see.

              Well, taste was great. Ended with a little chew to it but I slow cooked it a while in a crock pot while we were getting ready to go hunt this week. Turned out much better after a slow cook.
