    Question For The Butchers / Processors.

    Every year we raise a goat or lamb for the pit. I take them to the local butcher to have them slaughtered and quartered. When I get them back, I notice they always have the kidneys left intact to each hindquarter.

    Anybody know why they do that? I don’t eat them but I don’t mind them being there as it gives my dog a nice treat. But I am curious as to why.

    I don’t know why, but it is common that the kidneys are left on all carcasses (hogs, sheep, goats and cattle) in both State and Federally inspected plants.

      Do yourself a favor and grill them over a hot mesquite fire, a few minutes each side. Then forget about not liking food you’ve never tasted for a few seconds and give them a try. Fido won’t be getting anymore kidneys after that.
