I made the stock with the leg bones of a wt after I had bones them out. Then roasted them with onions, celery, and carrot. After roasting they went into a stock pot to simmer with salt, peppercorns, bay leaves, and thyme. Venison stock has great flavor, it's not as sting as beef stock. My favorite use for it is making black eyed peas.
