    Dishes to make with coarse ground meat

    I have a lot for elk and beef that I had ground into coarse ground meat "chili grind". We eat chili about twice a month but looking in my freezer we have a lot of coarse ground meat.

    Are there any other dishes you guys like to make with course ground other than Chili? Any recipes appreciated.

            I had a lot of mine also course ground. I make things like spaghetti with meat sauce but I discover that the course ground leaves lots of unchewable bits that are off-putting so I regrind it smaller unless it will be in a dish that is cooked low and slow to get tender like chili.

                Most mexican and italian dishes. Stir fry dishes, creamed beef dishes, stroganoff, beef burgandy, sloppy joes.

                          Highly recommend 75% coarse ground venison with 25% coarse ground bacon for burger patties. Always a crowd pleaser at my house!

                            Mexican Casserole

                            In a very large glass bowl, place

                            Layer 1: Broken white tortilla chips
                            Layer 2: One half of two pounds drained browned ground deer meat, seasoned in a skillet with garlic, onion, pepper and cumin
                            Layer 3: Two 15 oz cans of ranch style beans(spoon out as much as needed to make a full layer
                            Layer 4: One packet of 8 oz shredded sharp cheddar
                            Layer 5: Another layer of crushed tortilla chips
                            Layer 6: The other half of browned drained seasoned ground deer meat
                            Layer 7: Take one can of condensed cheese soup, diluted with 3/4 can of water, mix with one can of Rotel tomatoes, pour over the top
                            Layer 8: Top with another packet of 8 oz. shredder sharp cheddar.

                            Bake at 350 degrees for 30 minutes, then reduce to 325 for another 30 minutes.

                            Goes well with guacamole salad (what doesn't?). Add salsa as desired after cooking and serving.

                              Thaw it out and chop it up with a knife to make a finer grind. I`m not a lover of coarse ground meat at all. I don`t even like to eat HB meat that is fine ground, but people leave it in big chunks whenever they brown it for something. When I brown HB meat for anything, I smash it the whole time, so it breaks down to as small a piece as possible. I`m funny that way. LOL
