    Summertime Squash

My neighbor had too much squash, so he offered us some. Seasoned with SPG with olive oil after slicing 1/4" thick. Topped with Parmesan cheese and baked @ 425 until the parmesan cheese was melted like the picture below. About 25 minutes (plus or minus).

Just dip those in marinara sauce and I’m in heaven.

I’ve been picking and eating squash for about a month. My go to is to sauté it or fry it, but I’m definitely going to try it like that. Thanks for posting.

I am jealous. I have never been able to put the squash bugs at bay long enough to grow any.

I made this after seeing the post and it was great. When I cooked it the squash was pretty soft. I plan on making it again on the blackstone griddle to try and crisp them up.
