this is my favorite recipe I always take for venison:
      Ingredients:
      • ½ pound venison tenderloin
      • 3 tablespoons zesty Italian dressing
      • 12 slices bacon
      • ¼ cup cream cheese
      • 12 slices pickled jalapeno peppers
      • ½ teaspoon seasoning salt to taste

      Directions:
      • Cut the venison tenderloin lengthwise into 12 strips. Toss with Italian dressing and let sit in the fridge for a half-hour.
      • Lightly oil the grill grate and preheat the grill to medium heat.
      • Over a strip of bacon, place a strip of venison. Add a slice of jalapeo and 1 teaspoon of cream cheese on one end. Use a skewer to secure the roll. Add the remaining ingredients and repeat. Use the appropriate amount of salt to season the wraps.
      • Wraps should be cooked for 10 minutes on a warm grill before being turned over and finished cooking until the bacon is crisp.

Use a mallet and flatten the back strap or tenderloin very thin.

Dust with Fiesta beef fajita seasoning.
Spread lightly some softened cream cheese.
Cover cheese with a layer of fresh spinach.
Add a good bit of chopped onion sauteed in butter on top of spinach.
        Roll up tight.
Wrap in thin sliced, fatty bacon.
Add a little more fajita seasoning over bacon.
Grill on medium high heat until bacon is brown.

Very easy and very good. You can add peppers and/or mushrooms to the onions too if you are so inclined.

I like to use feta cheese. Higher melting point.

Good idea. I like it too. I just hate the low fat stuff my wife will buy. I’ll have to work hard to get the regular feta.
