Rub with olive oil & uncle Chris’s steak seasoning over a hot bed of mesquite coals to 145 internal temperature let it rest for 15 min then taste the goodness

I sous vide mine at 125 for a couple hours, dry it well with a paper towel and grill hot as hell for 1 min per side on all sides including edges. Sous vide with garlic cloves, butter, a little salt and pepper. I add a little seasoning after the final grill as well.

                      Is this serious?

salt, pepper, little EVOO. cook to your liking, I prefer reverse sear on mine.

I reverse seared a 2.65 pounder on Saturday. Holy ****, it was good.

Turn oven on between 175-200. Use bbq thermometer to constantly monitor internal temp. Season steak with salt. Place in oven until internal temp reaches 105. Have grill or cast iron skillet on high heat and ready to go. After internal temp reaches 105 take out of oven and immediately place on grill/skillet for 1 minute per side. Remove from heat. Melt pat of butter and season with fresh ground black pepper.

                              You're Welcome!
