I just did this one from Steve Rinella's meat eater website and got the ingredients from WinCo's bulk section. It came out really good and I'll start experimenting with changes. First up would be adding hot salt.

Best pork breakfast sausage seasonings?
This is what I do for breakfast sausage.
Breakfast:
50# - Mix cut pork with 3 packages of Emporium Spicy Hot Breakfast Sausage Seasoning, 1/2 package of Leggs #109, and enough water to rehydrate. Marinate overnight and then added 1 1/2 packages of Leggs and 2oz of crushed red pepper. Grind. Package. Freeze.
