    Simple Low Carb Chicken: Blackened Italian

    Came up with this by accident because I was too lazy to go to the store. It's low carb...but not really low calorie. We've added it to our semi-weekly menu during the busy week:

    Skillet
    4 chicken breasts (thin cut preferred)
    Olive oil
    Jar of alfredo sauce (I like Newman's)
    8 oz tomato sauce
    Fresh spinach leaves
    Blackened Seasonings (I use Zatarains):



    Garlic Powder
    Crushed red pepper
    Salt
    Pepper

    Put enough olive oil in skillet to cover the bottom and turn on Medium high/high.

    Cut up chicken breasts into bite sized strips.
    Coat heavily with Blackened season and add to skillet.
    Cook/stir until done (don't overcook, dries it out)
    Add the Alfredo sauce and tomato sauce and stir.

    Add garlic powder, crushed red pepper, salt and black pepper to taste.

    Cook until it's simmering and then add a big handful (or two) of chopped up fresh spinach leaves.

    Cook until the spinach wilts and is soft.

    Serve immediately.

    Lick your plate.

              Do you leave the remaining olive oil in the pan or dump before adding the sauce?

                  I left it...but I like a lot of olive oil. You could pour some out to your preference.

                    Good recipe. I made it a couple nights ago and it was really good. My fam ate it over spaghetti noodles and I just ate it plain, good both ways. I'm gonna do this with shrimp soon.

                      Thanks for the recipe.

                      I substituted sausage for the chicken and served over zucchini noodles for a Keto dinner.

                        I used shrimp last night. Added a little heavy cream to thicken up the sauce. Cook the shrimp in a little butter with the blackening seasoning. Cook for a few minutes until it's done and remove shrimp from pan. Make your sauce until it's thick then add shrimp and spinach for last minute or two. Dang it was good.
