Mac-n-cheese?

Ok, apparently for some folks mac-n-cheese is now a thanksgiving staple (millennials). My daughter will be looking forward to it this year as that is her favorite dish. Wife does not want smoked turkey this year so I have taken on the Mac challenge. Looking for a KIller I mean completely over the top recipe. If I can use my smoker or wood fire to make it, even better!

Ya done good trying to accommodate to your daughter, I never had Mac and cheese at the table during thanksgiving but now that I’m doing the cooking I will (millennial)... bacon and brisket is a must, 505 southwestern hatch Chile’s are another must. I take a little bit more liquid when I smoke the Mac just because I know my smoker will release more moisture.... another good add in is some gruyere on top because it melts so well.

I followed the youtube link lab man posted further up in this thread. Pretty much followed him exactly except for a 3rd of it I left the bacon off for my MIL. Gave it a few extra dashes of Franks Redhot and everybody raved about it.
