There are so many ways to do it. A lot depends on the type of duck. I've got favorite recipes for different breeds.

Sothwestern Egg Beaters
Gadwall breast cut length wise in strips,sprayed with olive oil, and stir-fried with (lightly) liquid smoke, soy sauce, and Tony's Mo-spice
chopped fresh sweet onion
