Yields as much slime as it does meat

Probably requires a good sear, rather than a pan fry [emoji23]

These posts are always fun. Already been said about depends where they come from, but could be compared to any meat. In Hawaii I remember some of the old timers would actually catch them on cane poles and used some type of algae/seaweed bait. It’s clear sandy bottom like east of the Mississippi or down on Padre. Meat is going to carry the flavors of what it was eating. Shoot a pig or a goat up in the jungle and it was kind of funky, get one out of the dry side of the island that was on pastures it tasted less “game” like. Same way a old cow pulled out the brush and butchered isn’t going to taste like a FFA project that got fed out on grain.

I'll bet money that NOBODY can make a Sabine Lake mullet worth eating. They live off mud, and refinery water.

Weird how acceptable table fare evolves. Javalinas are a great example for some.
My dad is a depression baby. We ate everything! We were well ahead of the curve on puppy drum and convicts I guess. :-)

I never heard of anyone eating them until I came here.

Hardhead is not near as slimy as gaftop. I hare those **** gaftop.

When I take smart fishing this summer I’m making him keep every single one he catches and then clean the boat.

That's what the Galveston guides do. Sheephead are "Bay Snapper".
