    Pastrami on rye. AKA "The Ruben"

    I brined a brisket for 9 days while we were in Arkansas about a month ago. When we got back home I smoked it for Pastrami sandwiches. Now I am reaping the fruits of my labor. This one is on rye bread with homemade Russian dressing, swiss cheese, Bavarian Sauerkraut, bacon and lettuce. I ate with sliced sweet yellow onions, but they were on the side. My favorite sandwich of all time.

        I did one with a corned beef from HEB about a year ago and it was just OK. Brining them yourself is the way to go. I packaged mine in 10 oz. packages and froze them. it is just enough for 2 nice size sandwiches. My wife doesn`t like the Kraut, but it really makes the sandwich if you ask me.

              Don`t be a hater. This is Libby`s Bavarian Kraut. It is sweeter and not as strong as most of them are. I am actually gonna make homemade sauerkraut for the first time when it cools off a little bit. I remember eating it at my grandmothers when I was a kid and it was great. Never had any since then though. If it turns out good I will post pictures.

                      X2 on homemade kraut. NO comparison with what is sold in store. I like a long ferment so it gets golden color

                      Wish I had source for fresh home grown cabbages - if anyone knows of source, let me know.

                      Has more water in them for better kraut making

                              Looks good except for the lettuce on the bottom . Pastrami is the king of all sandwich meats, hands down.
