    Stuffed backstrap

    I’m in charge of dinner at the lease Friday night and was thinking bacon wrapped stuffed backstrap. What is your favorite stuffing?

          I saw a recipe similar to this in the recipe section but was wondering if the boudin flavor would over take the venison?

                  I like to take the backstrap and sprinkle with lime juice. Then season with your favorite blend. Dice some jarred jalapeños and mix with cream cheese. Make a slit about 3/4 through thick part of strap but don’t cut the very ends. Stuff with the jap and cream cheese mixture. Lay out bacon on cutting board and roll it up. Hold together with toothpicks and cook on the grill!

                      If your looking for quick and easy. Buy the bacon wrapped jalapeños from HEB, unwrap bacon slap a piece of backstrap in there, wrap them back up and your ready for the grill.

                            Don’t ruin it with all that stuff! Olive oil, salt, pepper, and hot azz mesquite coals!
