Doesn't sound like it but hands down get jal. Bacon then brush with BBQ.. not sure why but it sound kinda.. "eh.." but is awesome.. not expecting to win but do try it one day..

filet the breast off the bone
lemon pepper marinade
Dijon mustard
chopped cilantro optional
cayenne
crushed red pepper

mix together and marinate over night

slice slivers of white onion
either slice fresh jalapeno or get the pickled sliced jalapenos

fold the breast in half put jalapeno and onion slice in the middle hold It together using toothpick

flash grill at high heat with jap and onion on the grill and the breast facing up then flip for the last 30-60 seconds do not cook over medium.

Not very original here but not normal either...This hits my inner fatboy perfectly.

deep fried dove popper

dove filet, jalapeno, pepper jack cheese, wrapped in bacon, battered and deep fried. I like seasoning the meat in Italian dressing or Famous Daves burger/steak seasoning.

I hate cream cheese...but I guess the pepper jack could subbed with cream cheese.

i still do them in halved jalapenos like poppers / ABTs
but i run the breasts meat through the meat grinder
then blend it with some seasoning
then stir in some cream cheese and grated cheddar
then wrap with a piece of bacon
then cook them high - 8" on a 22" OldSmokey
on a Kevlar FrogMat grill mat
and from another bbq message board we learned about butcher's card holders
which we use instead of toothpicks
they're stainless = dishwasher

Poppers.

Piece of purple onion as a base. layer cream cheese into it, lay on dove breast, Jalapeno on top, wrap in bacon and secure with skewer. Please in deep bowl and cover with syrup and a topping of brown sugar. Let marinate for at least 4 hours. Grill and keep basting with the syrup. Big sticky mess of deliciousness.

Love the ideas but the contest aspect of this ended the same day I started this thread. Maybe we could compile a cookbook of dove recipes

Fry the birds in batches until golden brown and crisp, 3 or 4 minutes. Drain well on paper towels.

Toss the fried birds with the melted-butter mixture, add the jalapeños and herbs, and transfer to a plate. Serve immediately.

I love this recipe ,primarily become it uses the whole bird. I know the breast is the best part and there is very little on the rest to eat,but I was brought up to not waste a morsel of edible meat. We pick them each ,singe them,dunk in buttermilk,salt ,pepper and dredge in flour and fry....Momma use to fry in bacon grease but we don't have that canister on the Back of the stove now. We
Use canola or whatever was on sale. My daddy would have a pile of squeaky clean bones on the side of his plate.

I love popers but I get tired of them as well. As I stated in an earlier post. Soak in salt water for a few hours. Pour the water off and put Hellmans mayonnaise in the bag and coat each breast well. Fridge over night and grill the next day. I leave them on the bone for this recipe. Don't add salt! The mayo has enough. You guys don't know what you are missing.

Remove the two halves from the breast bone, cut in half. Season with chili powder, black pepper, & salt. Pan fry in a little olive oil with sliced onion & jalapeno. Serve taco-style in warmed flour tortillas with refried beans, shredded cheese, & cilantro.

I don't know if this is still going on or not, or that I would " qualify" as this is not my reciepe either. But if you look in the reciepe section for killer fajitas, and use the dove Brest meat diced up and marinated over night in it. Best way I have eaten doves yet.

Gunny- I do them just like you did them here but roll them in corn meal / flower mix and then deep fry!! I use spaghetti instead of tooth picks. BOOM!! Amazing!!

Take a piece of bacon, stuff it with dove breast and a pepper, wrap it with cream cheese....

Seriously, i like them hammered flat with a meat tenderizer, deep fried with taters n bacon grease gravy.
Or slice them and season with fajita seasoning on flat iron and make fajitas or tacos.

Here's a twist on your regular fried bird:

-Slice the breasts length wise to make them half as thick or beat them to that thickness.
-Toast a 1/2 cup of pine nuts and then use a food process to make them into a flour
-Mix pine nut flour with 1/4 cup of regular flour, and add salt, pepper, dried parsley, paprika to taste.
-Whip a few eggs in a bowl, dip breasts into eggs and then dredge in the flour mixture.
-Rack breasts in the fridge for a few hours
-Pull dove out of fridge, let them warm up for an hour, and then fry in bacon / duck grease.

Serve over sweet potato waffle fries, squeeze a lemon over top and hit it with some hot sauce.

Best way is to combine the two best methods. Take the breast, soak in egg and then take a jalapeño slice and half a bacon strip. Wrap and toothpick it. THen dredge that in flour seasoned to your liking and fry it up like normal chicken fry. SO GOOD!

I like the poppers but I marinate them in Claudes brisket marinade for a couple of hours and then put em on the smoker at 300° for 30-35 minutes. Prefer hickory wood. Excellent.

Marinate in Dale"s sauce.. Skewer up with bacon and sausage if you like. Mesquite fire with stir fry veggies in homemade tortillas.

I’m not a great cook by any means but this is the way I do them and have been told by many people that my dove poppers are amazing.

Soak them in Italian dressing for 24 hrs
Jalapeños cut in half
Vegetable cream cheese
I prefer thin bacon
Grill em till the bacon is cooked
The kicker is glazing them with bbq sauce about 5min before you pull em off the grill.

Eat and enjoy!
