    Smokehouse is done

    Completed my one big Spring Break project. Trying the cast iron pot method instead of the fire pit, will see how it goes. Made it so the roof can be lifted if I need more draw, so far so good.
    Making sausage is next project.

                  Take a look at A-MAZN Products pellet smoker trays. I've used one for about five years to cold smoke sausage and cheese. They burn for about 12 hours on one fill and do not generate much heat. The secret to keeping them burning is to dry the pellets in the oven at 200 degrees for about an hour.

                      We have ours set up the same way and no problems keeping the temp where we want it. We do use a low pressure burner though.
