    When I was a kid I used to fish with my uncle. We caught fish by the tote sack and we would fillet them on the kitchen table much to my aunt's chagrin. He taught me quick how to keep my knife shaving sharp. I've had to resharpen my single bevel heads. Simple principle. Keep your angle right and use smooth even strokes. Make sure you take a flat stroke on the backside to curb any burr.

      Simple for those that can do that by hand. Not so much simple for those of us who cannot! If I don'T have a tool to hold the angle correct (KME sharpener), I just can't do it!
