    Axis Gyros

    Stole this recipe from my BIL after having them at their house and loved them.

    Tenderized then marinated the meat (backstrap), seared it in the cast iron, threw it in a pita and garnished with a homemade tzatziki sauce, purple onions and tomatoes.

    For the side I made homemade potato chips from small baking taters.

    Delish!

    For the marinade, mix all the seasonings together with the olive oil and toss the meat in it and throw it in the fridge for a few hours. I added Greek seasoning and extra salt.

    I added more lemon juice than it called for.

    If you like gyros, you'll love this dinner.

    Recipe:

    2 tablespoons olive oil
    1 1/2 tablespoons ground cumin
    1 tablespoon minced garlic
    2 teaspoons dried marjoram
    2 teaspoons ground dried rosemary
    1 tablespoon dried oregano
    1 tablespoon red wine vinegar
    salt and pepper to taste
