Default Deer Processors: The Good, Bad and Ugly

Found a thread from 2016 with great recommendations - could not find one general thread that was more recent.

Please post all of your favorites across Texas and any that need to be avoided as well.

I use Hunters Choice in Sanger. They do a great job and their breakfast sausage is the best I have had. I also have used Old Plantation Meats in Springtown. They do a really good job as well. Not a fan at all of Kubys in Dallas. Went there one time and the meat tasted horrible. Wound up throwing it all away.

I'm gonna process my own this year unless its a Wall Hanger so I can get him caped. That being said I have never had a problem with and have always recommended Whitakers in Iowa Park. If it's not to far of a drive though Bayco in Seymour is know around here as the Best!

It got so bad in the last couple of years I am doing my own. I get a great product at much less cost. I took advantage of big discounts during Covid to buy my equipment. In it for less than $600. 2.5hp stainless grinder, stainless mixer, and a stainless stuffer. Pan sausage costs me about $.45/lb. Link is $1.00/lb without cheese. Cheese adds another $1.00/lb. Sometimes need some pork fat or brisket which can add to prices too.

My favorite Klemkes in Slaton (near Lubbock) burned down a few years ago. Last year I used Fortsons in Waco and they were pretty good. Sub'd to hear other suggestions though. Always hard to find someone on a Sunday night when I need it.

Primo Processing in Hondo is my top pick. All of the below are also good, some have better items than others.

Ottea's in San Antonio.

Here are my recommends and some questions I have.

I've been using Kuby's in Dallas (good experiences for me to date), Ye Ole Butcher Shoppe in Plano, Fischer's in Muenster as my go to's in North Texas. These are all very good.

I'm wondering if anyone here has used Hirsch's Meat Market in Plano?

Looks like I need to try Cinnamon Creek Ranch in Roanoake based on their reviews from 2016.

I have not tried Bayco's in Seymour but have heard nothing but good things.

A friend from DFW area is looking for something near Waco. Sounds like Forston's was a good choice 5 years ago. Let him know about recommendations for JT's in Stephenville as well.

My processor is slow, sometimes sloppy, temperamental when standing for too long, and drinks too much of my beer while he is supposed to be processing.
But the price is right.

I’d used Juniors in Wharton the last 3 years. 2 years ago, the link sausage had a different taste to it. Pan, and summer sausage still tasted great! Last year, pan, link, and summer sausage all tasted like they’d been made out of an old ruttin buck. Definitely not the little ol doe I’d taken them. Very disappointed.

This year I plan on taking any to Tuttles in Woodsboro. A friend has been taking his their for years and hasn’t had an issue.

Bellville Meat Market. The sweet chipotle garlic sausage is **** good. Heard good things about the basic Italian sausage too

I always take some meat over to Vincek's in East Bernard to make into sausage. Been happy with them.

I've used Hunters Choice in Sanger for several years! The owners and staff are all great to work with!
I know several people that drive well out of there way to use them.

There was a place in Wise County that was busted for allowing customers meat to rot. There name is Backyard Taxidermy & Processing.

There was also a few other processors around the state that got in trouble for letting meat rot so make sure you do your research and read review!

I've been pleased with them but I will say I don't have much done when I take a deer to processor. Most I get is 5-10 hotlinks and then keep big muscles whole and grind everything else. That gives me options when it comes time to cook and keeps the price down. When you go start having jerky and snack sticks and sausage made, that prices goes through the roof.

I've done my own for years but last year had more than I had time to handle so took them to Kleins Smoke House in Boerne. I would call them just Ok. Meat came back a little gamey which never happens when I do it myself. If I need a processor this year I'd consider them again but wouldn't say they are any better than any others and I'm sure there are worse places.

Still cannot bring myself to Pay someone to process mine. I really enjoy processing it and can make whatever I want, I utilize the entire deer and make roast, steaks, smoked sausage, fresh sausage and pan sausage. Nothing goes to waste..
Also process my brother-in-laws deer as well. Guess I am doing something right, haven't had any complaints..

Republic Butcher Co- Round Rock.

Matt does a great job.

Mable habanero breakfast sausage is legit. Since he doesn't batch process its easy to ask for adjustments. Little more garlic, hotter etc.

Fischer's and Hess both in Muenster do a good job but more important they will sell their sausage mix to you so you can do your own.

Been looking for a new place in the Austin area. Going to have to try these guys out. Iíve used Hudsonís, Kleinís, and Hunterís creek.

I dropped an entire doe off at kleinís smokehaus in Boerne last year to be made in to dried sausage. The flavor was good but it was obvious they didnít spend much time cleaning the meat up. Because of that I havenít eaten much of it. Probably wonít use them again.

Iíve used BonTon Meat Market in Uhland and was very pleased with them. Iíve only had dried sausage made there and cleaned/cubed all meat before taking it but it was great dried sausage and everybody that tried it complimented it. I wouldnít hesitate to use them again.

I believe both places give you your own meat back as long as itís over ~20#.

Another vote for Bellville Meat Market. Its not cheap but that chipotle sausage and summer sausage cant be beat.

Man they had good jerky and sausage. Post stopped accepting deer too. As far as I know spur I'd the only place in the area with a legit processor now but havnt tried it yet.

Arnold's in Hempstead is who Ive been using the last two years. Very good, lots of variety to choose from as well. I typically split my meat into sausage, snack sticks and boudin. I trim and debone all my meat before taking it in so I know Im not getting junk back. Cernock's in Rosenberg is really good as well. They dont vacuum seal so I stop going there.

Fortsons in Robinson (Waco) is great. Rob does a great job, good turnaround. Highly recommend. Heís a great guy, honest, and on the plus side they do a really good job with their taxidermy work as well.

Tuttleís is top notch. Cody and Matt have continued the family tradition there and havenít missed a beat. Weíve been using Tuttleís for 50+ years, you wonít be disappointed.

Just dont ever take anything to Crowell for processing. I took a deer there last year because I didnt have time to do it myself, and the meat stinks very badly when I thaw it out. My friend took 6 deer there, and so far half of his has been very stinky as well. I think one of their coolers probably went out, and they gave the meat out anyway. So, I wasted $150 and wasted a day of going to pick it up and driving back home....never again

Hall's in Coleman, and Santa Anna Custom Processing were only open till noon on opening day.
I ended up having to drive an hour to B&R in Early, TX
I'm picking up my doe this Saturday so fast service. I'll report back on the quality.

Tuttles in Woodboro has become my go to processor. i don't mind the 3 hour drive to drop off or pick up meat from Katy. prolly had 20 animals from whitetails to zebra processed there over the past few years. still haven't found a piece of bone or hair in any of it. they also vacuum seal which is nice.
