    Smoked Cheese

    With the cold temps today it’s perfect for smoking cheese. You cold smoke using a smoke tube and pellets for the pellet smoker. These are apple wood and will give a mild smoke flavor. Cheddar, Gouda, Mozzarella, and Monterey Jack. Will smoke 3-4 hours then vacuum seal put in fridge for 3 weeks or so before starting to eat it.

    I got some hanging out in the fridge right now. Used mild cheddar and Colby jack with hickory pellets. Smoked them for 3hrs, I think I should have went longer.

      Maybe a dumb question, you put it in the fridge for 3 weeks before you eat it? Can't chill it and eat "right away"?

        You can eat it right away if you like. By vacuum sealing and aging it really helps with the smokey flavor in the cheese. The cheese can last months in the fridge when vacuum sealed.
