With the cold temps today it’s perfect for smoking cheese. You cold smoke using a smoke tube and pellets for the pellet smoker. These are apple wood and will give a mild smoke flavor. Cheddar, Gouda, Mozzarella, and Monterey Jack. Will smoke 3-4 hours then vacuum seal put in fridge for 3 weeks or so before starting to eat it.
