    Brisket Guys!

    I have a question for you. I bought a 10 lb brisket last Tuesday the 29th of October. Put in refergirator to age a few days. I seasoned it Friday night. Was going to cook today are tomorrow. Didn't do it today but was going to cook tomorrow. Just got a call with a death in the family. It will be at least Tuesday, but probably Thursday of this coming week before I can cook it. Can I leave it in the refrigerator are do I need to freeze it with it already seasoned?

      It will be okay in my ref for a few days. More worried about already having the rub on it. Thanks for the reply and bump.

          Wrap the brisket loosely in a triple layer of cheesecloth and set it on a rack over a rimmed baking sheet or other tray.

            Your basically cureing it... Will be great... I would certainly wrap it in cheese cloth or ceran wrap
