    Crawfish Cornbread

    Figured I would share this recipe with yall my wife uses for her crawfish cornbread. She made it last night again and man it is fantastic! Turns out great in a cast iron skillet!


    Crawfish Cornbread

    2lbs Crawfish
    2 boxes jiffy cornbread mix
    1 can cream style corn(sweet)
    4 cups grated cheddar cheese
    2 eggs
    1 1/2 sticks of butter
    1 medium onion chopped
    1 medium bell pepper chopped
    2 chopped jalapeños or serranos to taste


    Saute' onions, bell peppers, and jalapeños in butter, then add crawfish until heated. In a lg mixing bowl combine jiffy cornbread mix, eggs beaten, cream style corn, chesse, and sauteed mixture. Season to taste with ragin blaze, Tonys or whatever you like. Bake at 325° for 45 mins or until cooked.

    Sounds good.

    We do this without the crawfish and call it ‘Mexican cornbread’.

    Real salter butter and lots of it is the key.

          Man I’m sorry but I just fell in love with your wife. Don’t hate me. I will control myself. LOL. That is awesome and I will be doing that next week I promise you that. I make a similar version with fresh cracklings. Thanks for sharing.

                              Not trying to hijack but yes put cracklins in a food processor for a bit and put the crumbs in the mix.
