    Cajun jambalaya

    Hey all, cooked up a big pot today. Figured I'd share. This is one of my favorite things to eat and cook. And it's easy. Perfect for a big family dinner, deer lease etc.

    Ingredients-
    3 yellow onions
    1 bell pepper
    1 celery stalk
    4 tbsp garlic
    Green onions

    2-2.5lbs boneless skinless chicken thighs
    1.5lbs andouille
    4 slices of bacon

    2lbs rice
    64oz chicken broth
    1 beer
    Worcestire few ounces

    Some olive oil
    Cajun seasoning. I used Ragin Blaze today.
    Big cast iron or magnalite pot

    Slice the bacon, chicken, sausage
    Add it to the pot and brown it in some oil while you're slicing vegetables. Make sure to actually brown it. I season meat while cooking, get it spicy, the rice will soak up the heat.

    Once meat is done, remove from pot.

    Then cook down the trinity and garlic in a bit more oil.

    Once trinity is cooked down add back in the meat.

    Then add the rice, stir the rice in until it gets fully coated and a little browned.

    After that add in the chicken broth, Worcestershire, and a beer. Busch light is my drink. Lower to a low heat, and let cook 20-30-40 minutes, lift lid, roll rice, make sure its not sticking, then repeat until it hits your desired consistency.

    I serve it with hot buttered french bread.

          I’m a shrimp and chicken guy. Sausage as a filler overpowers decent dishes.

                      Can't mix surf and turf!

                      This one is supposed to be a thick, hearty, filling meal. It's not a delicate frenchy recipe.

                            That pot looks very nice.

                            My brother works for a big Snubbing company as a mechanic. His cooking skills have him called by name from company men when a unit goes to their location just for the food he supplies. Which reminds me, I could use a big ole bowl of some about now. Now I’m hungry
