Venison chili verde?

Every year I buy a ton of roasted green chilis, take them home and vacuum seal them to use until the next time. Chili verde is one of my favorite thing to make with them other than green chili potato soup! Below is a recipe I created and cook regularly. It will work with any meat. I have used everything from pork to red lechwe to zebra.
10-12 whole green chilies, chopped
1 large yellow onion, chopped
2-3 cloves garlic
1 tablespoon cumin
1 tablespoon Mexican oregano
1 teaspoon garlic powder
1 teaspoon onion powder
Salt to taste
I cook everything together in a small pot until the onions are tender and then use my ninja to turn it into a sauce.
2 lb venison, cut into stew chunks
2 tablespoons olive oil
Green chili sauce
2 cups chicken stock
Heat your pot over medium heat. Add the olive oil and sauté your stew chunks until golden brown on all sides. Add chicken stock to get all the brown bits off the bottom of the pot. Next add the green chili sauce you made. Cover and cook on low 5-6 hours or until meat is tender.
