How do you eat your backstrap

I prefer to pan sear mine like a ribeye with all the same seasonings with a light touch of Irish butter, cooked medium rare closer to rare. Curious how all you fellas like to cook yours.

Grill over mesquite or live oak. Then eat it medium rare.

Pan seared some deer heart and tenderloins in olive oil with salt and pepper tonight for dinner. Both medium rare. I like blackstrap the same way. Grilled is good too. I also like to slice it thin and grill it with fajita seasoning to make fajitas.

Grew up eating it all chicken fried, won’t hardly touch chicken fried these days unless with homemade gravy with bacon grease.

Now it’s always grilled, just different marinade or season each time to mix it up, and always rare.

X2. Or rare. Depends on what I’m drinking with it. Lately Colorado mule deer has been my go-to. Delicious.

Same but olive oil instead of butter and rare to very rare.

Bacon wrapped and grilled rare, or chicken fried with dirty gravy from the fryin.
