I made a very close version of this Thursday night and had it again on Friday.
It was great and three co-workers loved it as well. One doesnt' care for deer meat but loved my chili made from "organic" ground meat. We let her in on it later and she was okay with it. Couldn't believe it wasn't gamey. |

Have you used the Fuego De Sal in the chili yet? I cant find light and dark chili powder, only chili powder? Only place I have looked was HEB Plus? Any help.

I used some Culo del Diablo (Pedos del Diablo) in some rib rub one time and it was phenomenal. Glazed with plum jelly over direct heat after they came off the smoker. Smack yo mama good. I've used fuego in pinto beans as a finishing seasoning with excellent results. |

This is my go to chilli for years. Probably made it 3 dozen times. Never did add my thanks for sharing this, Bucky.
When it's just for me and my wife I make it hotter. A few deviations I've done over the years: Add a half cup of finely chopped onion (caramelized before browning meat) Drain fat off browned ground meat Ground white pepper instead of black pepper (I like it hot) Add 3-4 Serrano peppers at step 3, removed before serving (even more heat) Add one beer near the end I never have leftovers and always get compliments on this chilli. Wick Fowler's 2 alarm chili kit works very well for venison. I have used it for the last two years. Personally I don't like mixing venison with beef, pork or chicken it kind of defeats the purpose.

I have been using this recipe barely modified for a while now and me and the family love it. I cooked up 8lbs today for my daughters bday. It's all gone and everyone asked for the recipe. If you haven't tried it give it a go. 40 people now think im a world class chili maker.

I'd say about 6 decent sized bowls. I'd go ahead and triple it though. You can always freeze leftovers.
