It's starting to get to be chili weather finally.

got another one I'm wanting to make, but you literally make your own chili powder from a bunch of different dried chili's...gotta do some internet scouring to find what I need.

and YES...it works great with Venison, hog, axis...

I mixed venison and wild hog and it was tremendous!

Making the second batch today. DO NOT change anything the first time. It really is right the way it is. The second batch you can play with if you dare.

Letting it rest makes a huge difference. We let it chill in the fridge for at least 6 hours. Overnight would be best.

Making a double batch today so I can freeze small bags for eggs, burgers, hot dogs, chili pie, etc.

Finally had a chance to try this. Turned out great, just one mistake. Had Tyler's gf and Harley's bf over watching the Texans game. Lol, there was just enough left for me to be able to tell it turned out good. Lol. I love feeding kids.

made some again this past weekend. Used a variety of meats...beef tenderloin, venison and wild hog.

double batch

some sweet cornbreat on the side, and life was good.

About 2AM I was banished to the living room because the chili reasserted its authority on my colon...but it was worth it.

where are you supposed to find light chili powder? I've tried a couple of different places and no dice. do you just use more dark chili powder to substitute?

Used this recipe for a chili cookoff this weekend. I thought it turned out amazing. My chili and one other one were completely gone by the end of the evening and neither one placed. Most of the others were still over half full. Oh well, I'll definitely be making it again.

Fancy Light Chili is in any decent size store. I think going with regular chili instead over cooks the flavor.

I don't, but we usually use pretty lean chili grind.

the fat will get soaked up by everything else that gets added in (it's just more flavor anyway....I mean...healthy chili...pssshhhh)
