        So the consensus is they are good when cleaned and crispy....I’m just curious but isn’t the “when clean” part pretty much a given? I mean they are full of chit, ya you prolly want that cleaned before cooking.

        I’m down to try but it’s not very high on my list. I don’t even know what mollejas are but those look outstanding.

              It's the texture of "nuts" that I find the most off-putting. And the bigger they are, the harder they are to swallow.

              Now, crispy fried entrails are like nectar from the Gods...and they do make the delicious tacos!

                          I like them on the softer side not to crispy. Here in the RGV most taco joints serve them and order them medium, not soft not hard. I just ate some on Friday, they’d good in a corn tortilla with onion queso fresco cilantro and a green salsa.

                            I could eat a bundle of sweetbreads and tripas. Used to get tripas tacos all the time when we lived in Texas, got them soft and crispy, best with the green sauce.

                              If they're crunchy yes I love em. If not I'll eat it but I'm not a big fan of that texture.
