I've used Macks Wildgame Processing in Van before.
He does a decent job.
But my opinion might be biased.
We used JR's Custom Processing in Brady for 4 years. He did excellent job, he sold the shop and doesn't process anymore.

I’ve been using them for nearly two decades. They process beef so it’s done right. Their summer sausage, “beef” stix, jerky, sausage, etc are awesome. Make sure you get a couple of sticks of jalapeño and cheese summer sausage. You’ll thank me later.
