I made this at the lease last weekend when the cold front came through.
1 precooked roasted chicken
1 bag frozen mixed vegtables
1 med onion, chopped
1 bag egg noodles
2 32 oz boxes (or 6 cans) chicken stock
salt and pepper to taste
I buy the pre-roasted chicken at Brookshires. Remove the skin and discard. Pull the meat and tear into bite-sized pieces. Watch for small bones! Put stock in medium soup pot (or dutch oven) over medium heat. Add chicken, onion, and frozen vegtables. I usually toss the chicken carcass in as well and remove it when I add the noodles. Simmer covered for 15 - 20 minutes. Add salt and pepper to taste. Add the egg noodles and simmer covered until the noddles are tender and cooked through (10-12 minutes). You may need to add a bit of water because the noodles tend to absorb a lot of liquid. Check the seasonings one last time and serve with warm crusty bread.
PS: You can use an uncooked whole or cut up chicken and/or fresh veggies...but it takes longer.
