Sausage venison to pork ratio

    Best prices on pork butt are at Sam's. Plus you can get two butts in one package. Don't go 50/50. We did it this weekend and I had 100+ lbs of venison. Ended up with a whole lot of sausage that is really dry. The spices were right, and I added enough water, so that isn't the issue. It's just not that tasty because of the lack of moisture that would come from a higher consentration of fat and pork.

      What kind of sausage are you making? Each recipe will be different. This is what I would do for breakfast patty style sausage. Go to the local packing house that sells meat. Buy 50/50 fatto lean pork trimmings. Mix 1:1 with your venison, season to taste. Sausage will be nice and mild with just enough fat content, about 25%.

        Same here. But we get ours from Sams. We have not used wild hog in 20 yrs and will never use it again.
