Bruce, I forgot to mention in our pm's that I'm still making boudin for boudin balls. I will probably make about 10 lbs of stuffed boudin to bring for the pit but the rest of a full batch of CB's boudin recipe (usually about 40 lbs total) will be left loose to make into tasty balls. That should be about 10 lbs more boudin than we had last year. And if the crowd is small and we don't need to make that much than that means some gets to go home with anybody that wants to make a donation for the cost of the ingredients.

I'm not planning on bringing a pit just for the boudin but I'm sure we won't have much trouble finding somebody willing to smoke a little cajun hang down for us. And I'll have at least one fryer, probably two for Kelli's meat pies and most of the boudin balls.

Bowhica is going to have the crawfish folks peel some tails for us to mix into some crawfish/boudin balls too.

He didn't last year and I haven't heard anything about him coming this year either.

I talked to Scotty's son a few weeks ago and he mentioned bringing a pit that belongs to his employer but I haven't seen him post about it so I didn't want to speak for him i the event that something has changed.

How do y'all feel about using lard/clear frying oil instead of peanut oil for the fryers? I can get 35 lb (about 4.5 gal) of clear fry oil for about $18 instead of $33 for the same amount of peanut oil. The clear fry oil has a slightly higher smoke point to, which has never been a problem for us since we know what we're doing with grease.

One of the big jugs should be enough for the double fryer Michael is bringing and I'll have a jug for my setups as well.
