Inject with Tony Chacheres Creole injection seasoning and then rub the outside with Tony Chacheres season salt.

Tony’s and some garlic powder. If you want it to taste like chupacabra rub then add some cumin.

We use a lot of Flavor God. The Fiesta Sweet and Tangy is good stuff!

I agree, its what I use. Most all of the fiesta seasonings are good to us.

I call this my 'Magic' rub. It is awesome on chicken or pork.

                    3 Tbs Paprika
3 Tbs Slap yo mamma (or homemade, see below)
                    2 Tbs turbinado sugar
                    1/2 Tbs Thyme
                    1 tsp celery seed

I never make just a single recipe. I always multiply it and make a big jar. It keeps well. Turbinado sugar is required, because it dissolves slowly and has some molasses flavor to it.

                    Cajun spice
                    1/4C salt
                    1/4C garlic powder
                    1/4C paprika (plus 1T extra)
                    1T black pepper
                    1T white pepper
                    2T onion powder
                    T cayenne pepper
                    2T dried oregano
                    3T dried thyme
                    1T red pepper flake

It should make about a cup and a half. If you want the thyme and oregano fine, then you can blend the mixture. Just be careful when you open the blender!!!

Much cheaper than the store stuff if you have the spices and herbs already on hand.

Probably would be good on the rim of a bloody mary or michelada, too! =)

Zesty Italian dressing, place skin side down and drizzle the dressing on and after that keep it moist with the dressing until ready to remove from the grill.
