Beans were not an issue until the Texas chili cookoffs started, then in Terlingua, Texas in 1967 the CASI rules banned beans. Now all the experts claim there never was beans in real chili. But there is no evidence to back up that claim.
Besides, who is important enough to tell anyone of us how to cook chili? Cook your chili your way, if the chili snob or slob doesn't like it, let the slob cook his own chili. |

Beans in CHILI! cut and dry, it just ain't right, unless your from up north,
as they say up north they call it 3 bean soup, ![]() but i have been known to blend some in the blender to use as a thickener a time or two, ![]() just to see if someone would know the difference after swearing they would be able to tell and nope, he never knew it.. ![]() |

Is chili powder that is put in chili not a ground pepper? And are pepers not a vegetable? As well as the other spices that flavor it?!
So, basically, your eating vegetable flavored meat anyway. Then why not add some beans, and make that meat go a little further? I know of folks who add macaroni, or potatoes, or several other substances in rather than beans, or with beans. The fish are biting, and there's hogs to be kill-t. Gotta go! |

I am cool with beans in chili as long as you call it "Chili with beans" Dont go calling your chili, chili, if it has beans in it. On that note the only bean allowed in my opinion is pinto. Personally I never make chili, I make chili with beans.

Nobody here uses dried chili's?? I roast in cast iron to bloom then steep and blend to make a slurry for my chili. Also you don't use beans, tomatoes or any prepackaged garbage.
Real Texas Chili Recipe!!! ½ POUND SUET 2 POUNDS LEAN BEEF SHOULDER 1-POUND LEAN PORK SHOULDER ¾-CUP FLOUR 1-TEASPOON SALT ½-TEASPOON PEPPER 3 ONIONS CHOPPED 6 CLOVES GARLIC, MINCED, 1-1/2 QUART BEEF STOCK OR CANNED BEEF BROTH 4 DRIED ANCHO PEPPERS* 1 DRIED PASILLA PEPPER* 1 DRIED CASCABEL PEPPER* 1-TABLESPOON CRUSHED CUMIN SEEDS OR GROUND CUMIN FRY SUET IN CAST IRON KETTLE. REMOVE SUET AND DISCARD. CUT MEAT INTO ½-INCH CUBES. COMBINE FLOUR, SALT, PEPPER IN BROWN PAPER BAG. ADD MEAT AND SHAKE TO COAT. SAVE REMAINING FLOUR. SEAR FLOURED MEAT IN HOT FAT, STIRRING TO PREVENT STICKING, ADD ONIONS AND GARLIC; COOK AND STIR UNTIL SOFT. ADD BEEF STOCK OR BROTH AND BRING TO A BOIL; THEN REDUCE HEAT AND SIMMER SLOWLY WHILE PREPARING PEPPERS. WASH PEPPERS UNDER COOL RUNNING WATER; REMOVE STEMS AND SEEDS. BLOOM IN CAST IRON SKILLET; PUT IN A SAUCPAN; COVER WITH WATER AND BOIL FOR 5 MINUTES. LET STEEP 10 MINUTES. LIFT OUT PEPPERS AND GRIND OR PUREE, ADDING 1-1/2 CUPS WATER IN WHICH PEPPERS WERE COOKED. ADD TO MEAT, COVER AND SIMMER 2-3 HOURS OR UNTIL MEAT IS TENDER. GRIND CUMIN SEEDS USING A MORTAR AND PESTLE OR A HEAVY SPOON IN A CUP; ADD TO CHILI. ADD SALT TO TASTE. If I get a hankerin for some bean and meat mixture I go for the taco soup recipe on here. Otherwise I’d just as soon not have beans in my chili but it’s not a deal killer. I’ve eaten a lot of chili with beans in it that was good. Just not my preference.
