Good stuff, but...
"Gumbo" by definition is ONLY Okra because Gumbo is the African word for okra.
Three things:
It can't be called gumbo without okra
You have to brown up your okra, or it just ain't right
Never cook file (sassafras) in the soup because it becomes bitter, add it to the bowl.
Would y'all like to know what a "Porch Monkey" really is?
They are a Creole that is a mixture of the Pourch Creek indian tribe from the Alabama Delta with Blacks and French.
Thus, "Pourch Monkey" is the correct and original.
How bout "Coon ***", ain't what folks think either.
So many things get lost these days, like the reason God gave us Yaupon Holly.Last edited by Voodoo; 03-29-2017, 02:20 PM.

More stirring. Gumbo is a cajun dish. New Orleans is in no way shape or form cajun... There are Cajuns in New Orleans and your wife’s family may be cajun but just because they are from New Orleans means nothing, as far as gumbo goes. Most Cajuns are in or originated in Acadiana, their family names. Are typically obviously French, Fontenot, Thibideaux, Guillory, Joubert......etc.

okra has a tendency to "slime" , it needs to be cut into peices and either deep fried, or pan fried with a little vinegar 1st to prevent it from sliming in a gumbo
okra is used as a thickening agent, kida like file' in a gumbo
love me some duck gumbo with a dark chocolate looking roux
