Well this was probably some of the most fun I’ve had making a knife in some time! My first Japanese Gyuto. Made some Santokus but this was to be a thin slicer and cutter. Here’s how it went:
Dowel construction octagonal cherry blossom highlighted desert ironwood. Rounded out the finger choil for comfort.
Blade was heat treated then cryogenically treated.
210mm cutting length flat ground with hand sanding 500 grit then polished on the buffer. Good clean up then went into the muriatic acid with cleanup and 16 hour coffee etch.
Balance feels amazing and I love the way it turned out. I’m partial to this piece and am looking forward to making more. Maybe a 254mm next!
btw public service announcement: don’t use muriatic in an enclosed space or even semi open with airflow. All your other knives and tools will rust from fumes
