The first step for both is to debone the meat. I know it sounds time consuming and labor intensive, but it's really not too bad. Cut the breast meat off of both sides. Then:
Either roll in a mixture of equal parts garlic powder, salt, and pepper, and saute in butter until JUST done. Don't overcook, it'll be nice and juicy and pretty tender.
OR dust in flour, dredge in an egg wash and back into flour, and chicken fry. Remember to make a gravy afterwards out of the drippings, and serve with mashed potatoes.
